Developers are set to complete renovations on the former Jefferson’s Pub & Grill building in Winona, Minnesota, transforming it into a restaurant and event space by the end of the year. This redevelopment is part of the broader 60 Main project, which includes the construction of a five-story hotel-apartment complex adjacent to the building. The renovated space will house Heirloom Seasonal Bistro and serve as a venue for special events coordinated by Amy Jo Marks, the owner of Blooming Grounds and Muddled Thyme.

The historic building, listed on the National Register of Historic Places, originally served as a freight terminal for the Winona and St. Peter Railroad. Developers, led by Peter Shortridge, plan to meticulously restore both the interior and exterior, preserving its historical significance. The 60 Main project involves over $5 million in subsidies and includes the construction of 20-30 apartments and 70-80 hotel rooms in the adjacent parking lot.

The restaurant and event space will offer various functionalities, featuring daily offerings from the brewery and restaurant, as well as large dining rooms, meeting spaces, multiple stages, and expanded outdoor seating. The historic building is expected to provide flexible spaces for various activities, including food service, entertainment, events, meetings, and conferences.

Island City Brewing Company (ICBC), housed in the same historic building, will undergo remodeling and rebranding under new ownership. Graham Kaczmarek and Brook Merkwan, the new owner-operators, plan to emphasize ICBC as a music venue, with changes to the interior layout, a new name, logo, and a fresh vibe. They aim to maintain the brewery’s family-friendly environment and community events, such as bingo, trivia, live music, and festivals.

The new owners express a commitment to a local-first mentality, sourcing ingredients locally and prioritizing the Winona community. Kaczmarek, with extensive brewery experience, emphasizes the use of real ingredients instead of extracts. The renovated space, along with the rebranded ICBC, is expected to enhance Winona’s cultural and culinary scene. The larger 60 Main project, including the hotel-apartment complex, is projected to be completed and open in the summer of 2025.
