Authenticity rings pure and true in every dish coming from the Norvary kitchen, and that’s because owners Huy and Vivian dedicated time for research, development, and tasting. The first-generation Vietnamese-American couple decided to take a leap of faith post-Covid, moved to Winona and started their very own restaurant intent on sharing the flavors of Northern Vietnam. Norvary is sure to fill your heart and your belly.

What brought you to this profession and what do you enjoy most about it?

“Huy’s passion is to cook and try new recipes from different cuisines. We are lucky to have experienced the food in our native country and in the US. That is what makes it fun and enjoyable.”

 

What is the inspiration behind the menu at your restaurant?

“Bringing TRUE NORTHERN VIETNAM CUISINE to the US. It is hard to come by one in the Midwest and we find it important for people to explore our culture through our food.”

 

What is a customer favorite on your menu and why?

“Seriously EVERYTHING! It might differ depending on seasons. People gravitate towards a hot bowl of Pho noodle soup in the cold weather and Vermicelli salad during summer months. However, the Banh My, Rice bowls, or Spring Rolls are absolutely year-round items. We try to add a Special Dish here and there when time and labor force allows, but n/a beverages are alternated frequently. The most recent adventure was MOCKTAILS and they are selling so well.”

 

What is YOUR favorite item on the menu and why?

“My favorite menu item is the spicy Korean meatball. I know spicy isn’t for everyone, but I enjoy spicy food and this dish is just the right amount of kick. Finishing the bowl gives you the perfect balance of flavors.”

 

What is your favorite food or drink from another area establishment and why?

“We love Chef’s Table food truck and wish they would have a location in the near future. Other than that, Winona seems to have great choices for foodies despite how people sometimes think of Winona as just a cute, small hidden town. Some of my favorites, to name a few: Sapori, El Patron, Blooming Grounds, Heirloom Bistro, etc.”

 

What is one thing about this restaurant that people who have never been here should know?

“Sometimes people come in with certain assumptions like Pho noodle soup has to have bean sprouts and basil, as well as hoisin sauce condiments. This can be true, if the chef comes from the South of Vietnam. We originate from the North and want to introduce guests to another region of Vietnam through our recipes. Our ambition is for people to remember Norvary for its own features. As customers to other businesses ourselves, we look for each business’ identity and quality. We want something that speaks and tells us their story. That is what we are doing at Norvary.”
