What brought you to this profession and what do you enjoy most about it?
“My passion and interest for food brought me to the profession and I enjoy the organized chaos of the kitchen environment – it’s always hot, loud, people talking/yelling; it’s relentless in the best way.”
What is the inspiration behind the menu at your restaurant?
“The foods of Sicily combined with what I think people will be the most interested in.”
What is a customer favorite on your menu and why?
“The capicola sandwich, because of the fresh ciabatta bread that we make every morning and the combination of ingredients that go on the sandwich.”
What is YOUR favorite item on the menu and why?
“The sugo pasta, because it is a rich, slow-braised beef tomato sauce with a great deal of depth of flavor.”
What is your favorite food or drink from another area establishment and why?
“The paella from Nosh is absolutely fantastic; the rice is done perfect every time. It’s delicious!”
What is one thing about this restaurant that people who have never been here should know?
“It is a locally-owned place focusing on farm-to-table food all made in house – this is much more important than people realize.”
